A fun project to do with the kids, these ice cream sandwiches can be made in a snap and they taste fantastic.
1/3 c creamy peanut butter
1 T butter
1 (10½ oz) bag mini marshmallows
6 c crispy rice cereal
3 c Lochmead Farms Vanilla Ice Cream (substitute any flavor)
Place ice cream in mixing bowl to soften. In a large pot, over low heat, melt peanut butter and butter. Add marshmallows and stir until completely melted. Remove from heat and add cereal; mix well. Coat a square 9″ baking dish with cooking spray; press half mixture into the pan. Spread ice cream evenly across cereal. Press the remaining cereal mixture atop ice cream. Place in freezer for ½ hour or until set. Cut into 9″ sandwiches and serve.
